A quick and delicious healthy meal for any night of the week. These Sesame Chicken Lettuce Wraps will remind you of your favorite restaurant without adding the extra calories.
Wash butter lettuce and set aside 6-8 pieces for wraps. Depending on how many people you are serving, this recipe can be doubled as needed.
In a large skillet cook carrots, celery, onion and bell pepper in olive oil for about 2 minutes. Add garlic and a pinch of salt and pepper.
Next add ground chicken to the pan with ginger and a little more kosher salt and pepper. Cook thoroughly another 5 minutes.
Add splash of chicken stock to deglaze the pan. Stir in sesame oil and coconut aminos. Taste and add more as needed. Cook another 3-4 minutes to reduce liquid and condense flavors.
Assemble lettuce wraps. Sprinkle with sesame seeds. Serve with brown rice and avocado slices.
