Fall is the season for cooler weather and comfort foods. Such a great time for fresh apples, cabbage, and sweet potatoes. These Skillet Cider Pork Chops with Cabbage and Apples include all of these delicious Fall flavors. A simple, almost one-pot meal. 🙂 Trust me it’s a good one!
This recipe is both savory and sweet. The onion, cabbage, and apples are all such a great compliment to the boneless pork chops. If you haven’t tried this combination before, you need to! The addition of some fresh apple cider and Dijon mustard sends the flavors over the top! It’s so good!
Next level side
I highly recommend serving this dish with mashed sweet potatoes! It’s the perfect side to compliment these Fall flavors. You can use either white or orange sweet potatoes. Both are full of flavor and have many health benefits. Cook with butter, milk, minced garlic, and salt and pepper for a delicious, creamy side.
Just one serving of sweet potatoes contains a good amount of Vitamin C, Vitamin A, Manganese and other vitamins and minerals. Additionally, they can help stabilize your blood sugar, enhance immunity, boost brain function, and aid in weight loss.
Get to know your apples
Apples straight from the local farm this time of year are THE BEST! There are so many varieties to choose from. You’re sure to find a few favorites.
This recipe uses two different types of apples, but you can swap out the ones you like most. If you aren’t sure what apples to choose, no worries! I’ve put together a quick list of some of my favorites below.
*Granny Smith- These are the light green apples that are crisp and tart. Such a great apple for pies because of their firmness, but they can also be used in savory dishes. A very versatile choice.
*Fuji- These are some of my favorites for just eating as a snack. Sweeter than the Granny Smith, but not too sweet. They add a lot of flavor. These are best raw, in salads or slaws, and also sauces.
*Honey Crisp- A crisp apple that is sweet and tart. These hold their shape nicely in desserts, savory dishes, or sauces. These are also used often to make apple cider.
Any combination of these apples would be suitable for this Skillet Cider Pork Chops with Cabbage and Apple recipe. Just make sure they are a firmer variety so they don’t turn into mush. This is important for this recipe. There are so many good apple varieties, but it often depends on your region.
More Apple Cider please!
Fresh apple cider from a local farm is also hard to beat! I always make sure to grab some to not only drink, but incorporate into recipes. I really think what makes those recipe shine is the addition of not only apples, but apple cider.
The best apple cider tends to be the one straight from the apple farms. That may be easier to find in the Fall, but there are many apple ciders that will work just fine for this recipe.
Apple cider vs apple juice? Apple cider is fresh, unfiltered and often unpasteurized, while apple juice is filtered and pasteurized. Cider tends to look cloudy and contains more of the healthy polyphenol compounds than clear apple juice (up to two to four times the amount). So don’t be concerned if your apple cider has that sediment in the bottom. It’s actually beneficial to your health.
Many people may avoid apple juice or apple cider due to the high sugar content. However, it’s natural sugar which is far better than any processed sugar. It adds just the right amount of sweetness to this Skillet Cider Pork Chops with Cabbage and Apples recipe.
Recipe Tips:
-Pick two different varieties of apple to add more flavor and depth to your recipe.
-Make sure to season your pork chops well and brown on all sides without burning. This will make for a more flavorful chop.
-Cook your onions, apples, and cabbage in the same skillet you cooked your pork chops in. The drippings will enhance the flavor of the entire dish. When you add your stock and cider, be sure to scrape all of those tasty bits off the bottom of your pan.
-Slice your cabbage into skinny, short strips to make it easier to eat. This also helps it cook faster.
-Taste your food while cooking! This is an important one! Season with salt and pepper at multiple stages. This ensures a well-seasoned dish.
-Serve with mashed sweet potatoes for the most delicious Fall meal! You can use either the orange or white ones. Sweet potatoes have extra nutritious benefits.

Skillet Cider Pork Chops with Cabbage, Apples, and Onions
These Skillet Cider Pork Chops with Cabbage, Apples, and Onions make the perfect recipe to enjoy all of the seasonal Fall flavors. A delicious combination sweetened with fresh apple cider and balanced with savory flavors.
Ingredients
- 4 boneless pork chops, lean
- 1/2 Large Green Cabbage, sliced thin (3” strips) (about 4 cups)
- 1/2 Large Red Onion, sliced thin
- 2 Fuji Apples, sliced
- 2 Granny Smith Apples, sliced
- 1/2 Cup Low-Sodium Organic Chicken or Veggie Stock
- 1 Cup Fresh Apple Cider (cloudy kind…not thin like juice)
- 2 Tbsp Extra Virgin Olive Oil
- 3 Tbsp Unsalted Butter (I use pasture-raised)
- 2-3 Cloves Garlic, sliced
- 1 Tbsp Dijon Mustard
- 1/4 Tsp Dried Rosemary
- Kosher Salt & Pepper to taste
Instructions

Season pork chops with salt and pepper.

In a large iron skillet, brown pork chops on medium heat with 2 tbsp olive oil. Once cooked, remove chops and set aside.

In the same skillet, add butter, garlic and rosemary. Then add onions and apples and cook 3-4 minutes until slightly soft.

Next, add sliced cabbage, stock, apple cider, dijon, and a pinch of kosher salt and pepper. Cook until cabbage is tender but still has a bit of crisp texture (about 5-7 minutes).

Add pork chops back into pan to heat through.

Once hot, slice pork chops on a serving plate and top with a bit of the broth. Serve with cabbage mixture and garlic mashed sweet potatoes.
