The perfect sweet treat

When I used to work at Starbucks, my favorite treat was the Blueberry Oat Bars! They are so good! Lucky for me, they are also super easy to make.

I don’t usually like an overly sweet dessert bar. I want to be able to taste the ingredients….especially if it contains blueberries. That’s the one thing I like about these bars! They are buttery and a little sweet, but you still get the flavors of the blueberry which can sometimes be a little tart.

If you need to whip up a quick dessert, these Blueberry Oat Bars are a great choice. They only take a few minutes to prep and they can be in the oven while you’re cooking dinner.

These Blueberry Oat Bars are also good served with natural vanilla ice cream.

Stock your pantry

I’m all about stocking ingredients in my fridge, freezer or pantry that I can use for a quick meal or dessert at any time. It really helps when you’re in a pinch.

A few staples to always keep on hand to make a dessert like this is unsalted butter, flour, sugar, oats, and frozen berries. You can always find a way to make a fruit crisp, cobbler, or dessert bar with those ingredients. Remember, they freeze fruit at their peak ripeness, so sometimes they are fresher than ones you’ll find in the produce section.

Another great tip is to remember you can always swap in any particular flour or sugar that you like. Just make sure to look up the recommended ratio. I like using fresh lemon juice and frozen blueberries in this recipe.

Balance is key

Some desserts are better using the original ingredients, but often times I’ll do recipe makeovers to make them a little healthier.

The thing I always remember is that the purpose of dessert isn’t really to be healthy in the first place. Allow yourself to have treats from time to time.

I feel like blueberries are underrated sometimes. Even though they are so good in muffins, scones, bars, or tarts etc. They are such a health and wellness powerhouse! A great fruit to add to a healthy diet, full of antioxidants and not super expensive to keep on hand.

Recipe tips:

-You can make this recipe with fresh or frozen blueberries. I usually use frozen. Just remember, your bake time will be longer with the frozen ones.

-When adding the melted butter to your dry ingredients, make sure to mix it in really well. The consistency for the cookie bottom and crumble should resemble sand but still look a little dry.

-Make sure to press cookie bottom into the bottom of your 8×8 baking dish firmly. This ensures they hold up well after baking. It prevents them from just falling apart.

-Cooking times may vary. Always start lower and add more time if needed. The crumble topping can easily burn if your aren’t careful.

-Let the bars rest for at least 45 minutes before cutting. They need this time to set.

-Serving them a little warm is really good with a Natural Vanilla Ice Cream. They are also great just served with coffee or milk, once they’ve cooled a bit.

-It’s pretty hard to mess these bars up. They are easy to make, but come out looking fancy and delicious. They are a crowd pleaser for sure!

Blueberry Oat Bars

These Blueberry Oat Bars are the perfect sweet treat. The combination of blueberries, lemon and vanilla makes for a bright and flavorful dessert.

Ingredients

  • 1 Cup All-Purpose Flour
  • 3/4 Cup Old Fashioned Oats
  • 1/2 Cup Granulated Sugar
  • 1/4 Cup Brown Sugar, packed
  • 1 Tsp Pure Vanilla Extract
  • 1/2 Cup Unsalted Butter (1 stick), melted
  • Kosher Salt to taste (About a pinch)
  • 2 Cups Blueberries (fresh or frozen)
  • 1/3 Cup Granulated Sugar
  • 2 Tbsp All-Purpose Flour
  • 2 Tbsp Fresh Lemon Juice (1 small lemon)

Instructions

  1. Preheat oven to 350 degrees. Line an 8x8 baking dish with aluminum foil and grease pan (I used baking spray). This makes for easy cleanup. Set aside until needed.

  2. In a microwave-safe bowl, melt your butter 20-30 seconds at a time and stir to prevent popping.

  3. Pour butter into medium mixing bowl. Add first 7 ingredients (melted butter included) from the list above (flour, oats, sugar, brown sugar, vanilla, and salt). Stir well. Mixture should resemble sand with a few larger clumps. It will still be a bit dry.

  4. Set aside 1 heaping cup of the crust mixture. This will be used as the crumble topping.

  5. Pour the remaining crust mixture into the bottom of your baking dish. Using the back of a spoon or spatula, press firmly into an even layer, covering the entire bottom. This will ensure your bars will stay together after baking.

  6. Using the bowl from the crust/crumble topping, combine blueberries, sugar, flour, and lemon juice. Stir until evenly mixed. Pour Blueberry mixture evenly over crust layer in your baking dish.

  7. Using the reserved crust mixture, sprinkle crumb topping evenly all over the top of the blueberries.

  8. Bake about 45-50 minutes (if you used frozen blueberries). Bake time may be 10-15 minutes less if you used fresh berries. Always start with a lower time and add more if needed. Bars should look set with a light golden top. Watch them carefully as the crumble topping can burn easily towards the end if your aren’t careful.

  9. Let bars rest and cool at least 30-45 minutes or until well set. This will prevent them from falling apart. Cut into 12 bars. I recommend storing them in the fridge so they stay together better. They will keep well for about a week or so.

    I think the bars are back at Starbucks! I love them too, but much prefer to make them at home. Great tip about letting them sit for the 45 minutes to firm up. Wonder if I can call these BREAKFAST =)

    1. I think they work for breakfast! πŸ™‚ So yummy! I love the ones Starbucks sells but sometimes they are a little too sweet. This recipe is a great balance of buttery, sweet and a little tart. They also have a crunchy cookie bottom.

    1. Thank you! πŸ™‚ I haven’t tried them with honey. The sugar is in the cookie layer at the bottom and also the crumbles on top. When mixed together with the other ingredients, it resembles wet sand. You could use coconut sugar (which is dry like granulated sugar) if you wanted a healthier sugar choice. Let me know what you try!
