Who else loves egg rolls? They are so good!!! This Egg Roll in a Bowl Recipe has all of those delicious flavors you want, but lightens it up a bit. You can still have all of the foods you want, but choosing a few healthier swaps can make it even more nutritious.

One of my biggest goals has been trying to find a way to make some of our favorite meals with a healthier twist. The main reason is so that we can enjoy them more often. There are so many delicious foods out there and many come from popular restaurants or take-out spots.

While there are more and more that are switching to better ingredients and healthier menu options, sometimes it can be hard to come by. So, why not make a date of it and learn to make some of your favorite meals at home? It’s so fun to expand on the list of meals you can make homemade.

All about the flavor

The main ingredients that make a good Egg Roll in a Bowl would be a lot of garlic, ginger, sesame oil, and traditionally soy sauce. Sometimes I swap out coconut aminos in place of soy sauce. This is just a personal choice as I try and avoid a lot of soy products.

Soy sauce can also be super high in sodium so I try and stick with the low-sodium version when I do use it. Keeping your sodium levels in check will only benefit your overall health. Everything in moderation is the way to go. If you use coconut aminos they will add a slightly sweeter flavor to your egg roll dish.

Fresh veggies

I love adding in as many vegetables into my meals as possible. If a recipe calls for one kind of veggie, I try and add two or three more. Sticking to complimentary flavors of course. This is a great habit to adopt to always make sure you’re getting enough for the day.

In this Egg Roll in a Bowl Recipe cabbage would probably be just fine, but why not also add celery and carrots? These flavors work so well together! I usually cut everything up pretty small so it’s easy to eat.

All about the sauce

We LOVE this one, especially as a finishing sauce to any kind of rice or noodle. It has a lot of good ingredients and is always made in small batches to provide the freshest ingredients.

This sauce is key to finish this recipe! Just a drizzle across the top of your Egg Roll in a Bowl is all that’s needed. Although, you’ll love this sauce so much that you’ll want to add more. They even have a gluten-free option if that’s what you need.

Ingredients

  • 2 Tbsp Extra Virgin Olive Oil
  • 1 Lb Ground Chicken (96/4 lean)
  • 1 Large Carrot, peeled and diced small
  • 2 Ribs Celery, diced small
  • 1/2 Cup Onion, diced small
  • 1/2 Small Green Cabbage, sliced small
  • 2 Tbsp Low Sodium Soy Sauce (-OR- Coconut Aminos)
  • 1/2 Tsp Sesame Oil
  • 2 Clove Garlic, minced
  • 1/4 Tsp Dried Ginger
  • 1/8 Cup Chicken Stock
  • 1 Scallion, sliced
  • kosher salt and pepper to taste
  • Sesame seeds (to sprinkle on top)

Instructions

  1. In a large skillet, heat olive oil. Add onion, carrot, and celery and cook for 2-3 minutes or until slightly tender. Add garlic, salt and pepper.

  2. Add ground chicken, ginger, and more salt and pepper. Cook thoroughly until browned.

  3. Add cabbage and chicken stock. Cook until tender.

  4. Next, add sesame oil and soy sauce (or coconut aminos). Cook an extra 5-7 minutes to condense flavors. Mixture should be dry but not over cooked.

  5. Serve with brown or white rice. Top with a drizzle of Japanese Barbecue sauce and scallions.
